Bake Your Cake and Eat It Too

I have become so inspired as to share my thoughts, participation and perhaps wisdom via a blog to talk about my placid experiences in life and realizing the impact of these little things. Having said that, I am now loving my life doing the little things I love when I want and remembering only the good times while reflecting on lessons learned, life experienced and the freedom to be me while embracing and acknowledging that there are no mistakes. Believing that everything happens for a reason, including our words spoken, and what I have experienced as a child and now adult has happened to me to get me where I need to be in my own individualism. I can now relax knowing that with each day passing by I am on my path that has been laid out for me. Funny thing, I always have been but I just didn’t know it. With that…I’ve decided to try my hand at baking a fun dessert every week. I am not a baker by any stretch of the imagination so this is truly going to be fun.

Today I baked a yellow bundt cake from scratch. As this is my first cake from scratch I kept it simple. I got more creative by making my bundt two layers by cutting it in half and adding a cherry filling. I topped it off with a chocolate frosting. A wonderful childhood memory that I hold dear to me…As I remember it, my mother or sister Josephine would make a cake from scratch every Sunday. We had wonderful Sunday dinners and the cake was a perfect treat.

I loved making this cake. i wasn’t sure how it was going to turn out but one thing I did know was the amount of love that I was putting into it which gave me high hopes. Sunday evenings now days in our home is game night and tonight I’m happy to say, we aren’t having store bought dessert. Of course, there is nothing wrong with that.

As you can see from the pics, I may have got a bit carried away with the cherry filling but let me tell you, it was perfect. I put my icing between the two layers before adding the cherries to prevent the cake from becoming juice soaked. That technique worked well as even a day later the cake is perfect.

Recipe:

2 1|2 cups flour

1 1|2 cups sugar

3 1|2 teaspoons baking powder

1 teaspoon salt

1 1|4 cups milk

1|8 cup vegetable oil

1|2 cup butter

1 tablespoon vanilla extract

3 large eggs

Mix flour, sugar baking powder and salt in small bowl for later

Place softened butter in bowl and mix until smooth

add dry ingredients to smooth butter and mix together

add milk, oil, vanilla, eggs and mix (I use a hand mixer for about 1 minute)

Pour batter into pans ( I buttered my bundt pan well to prevent sticking)

I baked at 350 for 45minutes. After removing from oven I turned it upside down on a clean cloth to cool and release itself from the pan. It worked perfect.

I used canned cherry pie filling. I heated the cherries in a small pot adding brown sugar, cinnamon, vanilla, and a few drops of lemon juice. I just added everything by my preferred taste and texture and that worked well for me.

After I got the cake baked I just used my imagination as to how I wanted to top it off, hence the cherry filling and choice of chocolate icing. No pressure!
