Enjoy All of Your Snacks in Life

I have learned over the years that allowing myself to breathe and enjoy the moment has helped me through so many of my life experiences.  I have found that no matter what is going on around me, if I take a moment to appreciate all that I do have, all of the good that has happened, and embrace the love from within I can see the light at the end of the tunnel in my imagination and I find that that is all I needed to see.  That glimmer of light in the tunnel of total darkness will every time give me the courage and strength to continue on.  I feel that peace of mind daily when I take that moment to breathe before putting my feet on the floor.  For me I have found that so much can be changed in a moment of time with a thought of gratitude and relaxing into the feeling of, all is well. 

I have also noticed that similar feeling the moment when I reach for my favorite snack.  I have noticed when I pick it up with my fingers the tension or anxiousness  begins to release itself oh so gradual.  Food is meant to satisfy our taste buds so it is of no surprise that as I bite down on a delicious snack the full release comes.  I have found that giving even a snack its full intention gives me the full benefits.  So I was thinking about how I love snacking on something perhaps between, before or after meals and not to mention those midnight cravings.  With that thought  I wanted to make a snack for the family and with the  intentional love that I put in everything I make. As I believe that it’s not about the food we eat that is healthy or unhealthy but actually it’s our thoughts or feelings of the food that we eat. Instead of trying to limit myself where snacking is concerned I love the act of just enjoying the satisfaction intended.  I love fruits and vegetables so with  that ideal running wild in my head I decided to make fruit and vegetable cookies this week. The first night I made sweet potato cookies. I love this recipe I’ve had over the years. It’s just a simple sugar cookie recipe changed up with less sugar and more cinnamon.  The cookies are soft and moist. Everyone loves them and it gives me such a good feeling seeing them come back for more helpings.  The sweet potato cookies were such a hit that I also made carrot and spinach cookies.  The grandkids ages 7 and 9 love their bite size shapes and always return for seconds. I ended the week with a batch of strawberry fruit cookies.  I love the bit of crunch around the edges. Yes, it is the little things.

Recipe:

1/2 cup sugar

1/2 cup butter

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

pinch of salt

1/2 teaspoon ground cinnamon

3/4 cup of your cooked vegetable or fruit

TIP I didn’t have to cook the strawberries I just mashed them.

With the vegetables and fruit I had to strained them for about 10 minutes

until most of the liquid had drained off..

I baked the cookies at 375

I lined my baking sheet with aluminum foil then greased the aluminum foil. This worked great for me. In a medium sized bowl, cream together sugar and butter until well mixed. Stir in the fruit or vegetable.

Add the flour, baking powder, baking soda, salt and cinnamon into the mixture, and stir to blend.

Drop teaspoonfuls of the mixture onto the baking sheet about 2 inches apart.

Bake the cookies for 8-10 minutes until golden. Transfer to a wire rack and let cool.

The cookies turned out really well and was so easy and quick to do.
